Ingredients:
- 1/2 kg boneless chicken
- 3/4 cup gram flour (besan)
- 1 tablespoon ginger garlic paste
- Salt, to taste
- 1/2 tablespoon red chili powder
- 1/2 tablespoon turmeric (haldi)
- 1 teaspoon red chilli flakes (optional)
- 1 teaspoon roasted cumin seed powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 medium onion
- 2 to 3 green chillies
- 1/2 small bunch coriander leaves
- 1/2 cup water
Method:
- Cut the boneless chicken into small pieces.
- In a chopper, add onion, green chillies, and coriander leaves. Chop them finely and add to the chicken.
- Add ginger garlic paste and all the remaining spices (except besan/gram flour and water) to the chicken. Mix well to combine.
- Gradually add the besan (gram flour) to the chicken mixture, stirring continuously with a spoon.
- Add water gradually as needed to achieve a thick, but not watery, consistency.
- Heat oil in a deep frying pan or wok over medium heat.
- Drop spoonfuls of the chicken mixture into the hot oil, frying in batches to avoid overcrowding.
- Fry the chicken pakoras until golden brown and crispy, then remove them from the oil and drain on paper towels.
- Serve hot with mint raita, imli ki chutney (Tamarind Sauce), or your favourite sauces for dipping.
