Ingredients:

  • 1/2 kg boneless chicken
  • 3/4 cup gram flour (besan)
  • 1 tablespoon ginger garlic paste
  • Salt, to taste
  • 1/2 tablespoon red chili powder
  • 1/2 tablespoon turmeric (haldi)
  • 1 teaspoon red chilli flakes (optional)
  • 1 teaspoon roasted cumin seed powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 medium onion
  • 2 to 3 green chillies
  • 1/2 small bunch coriander leaves
  • 1/2 cup water

Method:

  1. Cut the boneless chicken into small pieces.
  2. In a chopper, add onion, green chillies, and coriander leaves. Chop them finely and add to the chicken.
  3. Add ginger garlic paste and all the remaining spices (except besan/gram flour and water) to the chicken. Mix well to combine.
  4. Gradually add the besan (gram flour) to the chicken mixture, stirring continuously with a spoon.
  5. Add water gradually as needed to achieve a thick, but not watery, consistency.
  6. Heat oil in a deep frying pan or wok over medium heat.
  7. Drop spoonfuls of the chicken mixture into the hot oil, frying in batches to avoid overcrowding.
  8. Fry the chicken pakoras until golden brown and crispy, then remove them from the oil and drain on paper towels.
  9. Serve hot with mint raita, imli ki chutney (Tamarind Sauce), or your favourite sauces for dipping.
