Ingredients:

  • 1/2 kg boneless chicken (cut into thin strips)
  • 1 tablespoon garlic paste
  • 4 tablespoons oil
  • 1/2 tablespoon salt (or according to taste)
  • 1/2 tablespoon black pepper
  • 1 tablespoon sugar
  • 3 tablespoons soy sauce
  • 1 tablespoon dark soy sauce (optional)
  • 2 tablespoons oyster sauce
  • 3 tablespoons sweet chili sauce or chili garlic sauce
  • 1 cup water
  • 2 bell peppers (cut into small cubes)
  • 3 spring onions (cut into small pieces)
  • 1 tablespoon chopped red chili or chili flakes
  • 1 tablespoon cornflour mixed in 1/2 cup water
  • 1 cup cashew nuts

Instructions:

  1. Heat oil in a pan and add garlic paste. Stir for 1 minute, then add the chicken strips. Cook for 3-4 minutes until the chicken is lightly browned.
  2. Add salt, black pepper, soy sauce, dark soy sauce (if using), oyster sauce, sweet chili sauce, and smoky BBQ sauce. Stir-fry for a few minutes over high heat.
  3. Pour in 1 cup of water, cover the pan, and simmer for a few minutes over low heat until the chicken is cooked through.
  4. Remove the lid and gradually add the cornflour mixture while stirring continuously to thicken the sauce.
  5. Add the cashew nuts, bell peppers, spring onions, and chopped red chili or chili flakes. Mix well and cook over medium heat for a few minutes until the vegetables are tender.
