Quick Fix Chicken Chow Mein - Street Food Style

Ingredients
- 1 packet boiled egg noodles
- 1/2 kg chicken, thinly sliced
- Salt, to taste
- 1/2 tablespoon black pepper
- 1/2 tablespoon crushed red chillies
- 4 tablespoons soya sauce
- 2 tablespoons vinegar
- 3 tablespoons ketchup
- 1 teaspoon cornflour
- 1/2 tablespoon sugar
- 1/2 cup water or chicken stock
- 2 carrots, thinly sliced
- 1/2 cup chopped spring onions
- 1/2 cup thinly sliced cabbage
- 3 tablespoons oil
- 1 tablespoon ginger paste
- 1/2 tablespoon garlic paste
Instructions
- Marinate the chicken in 1 tablespoon of soya sauce, 1 tablespoon of vinegar, a pinch of salt, black pepper, and cornflour. Set aside for a few minutes.
- Heat oil in a pan. Add ginger and garlic paste. Once golden, add the marinated chicken and cook on high heat.
- Season the chicken with black pepper, salt, and crushed red chillies. Pour in 1/2 cup of water or chicken stock, cover, and simmer for 5 minutes on low heat.
- Add the boiled egg noodles to the chicken mixture and mix well.
- In a separate bowl, combine the remaining soya sauce, vinegar, and ketchup. Pour the mixture over the chicken and noodles. Stir to combine.
- Add the thinly sliced carrots, cabbage, and spring onions to the pan. Mix well.
- Sprinkle sugar over the mixture and stir. Optionally, add a few drops of sesame oil for extra flavour.
- Garnish with sesame seeds and additional spring onions before serving.
