Ingredients

  • 1 packet boiled egg noodles
  • 1/2 kg chicken, thinly sliced
  • Salt, to taste
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon crushed red chillies
  • 4 tablespoons soya sauce
  • 2 tablespoons vinegar
  • 3 tablespoons ketchup
  • 1 teaspoon cornflour
  • 1/2 tablespoon sugar
  • 1/2 cup water or chicken stock
  • 2 carrots, thinly sliced
  • 1/2 cup chopped spring onions
  • 1/2 cup thinly sliced cabbage
  • 3 tablespoons oil
  • 1 tablespoon ginger paste
  • 1/2 tablespoon garlic paste

Instructions

  1. Marinate the chicken in 1 tablespoon of soya sauce, 1 tablespoon of vinegar, a pinch of salt, black pepper, and cornflour. Set aside for a few minutes.
  2. Heat oil in a pan. Add ginger and garlic paste. Once golden, add the marinated chicken and cook on high heat.
  3. Season the chicken with black pepper, salt, and crushed red chillies. Pour in 1/2 cup of water or chicken stock, cover, and simmer for 5 minutes on low heat.
  4. Add the boiled egg noodles to the chicken mixture and mix well.
  5. In a separate bowl, combine the remaining soya sauce, vinegar, and ketchup. Pour the mixture over the chicken and noodles. Stir to combine.
  6. Add the thinly sliced carrots, cabbage, and spring onions to the pan. Mix well.
  7. Sprinkle sugar over the mixture and stir. Optionally, add a few drops of sesame oil for extra flavour.
  8. Garnish with sesame seeds and additional spring onions before serving.
